There’s an undeniable magic that comes with autumn. The crisp air, the vibrant colors, and the irresistible pull towards warm, comforting flavors. It’s a season that beckons us into the kitchen, inspiring us to create dishes that nourish both body and soul. Today, we’re diving into a recipe that perfectly encapsulates this seasonal charm: a delectable Almond Quick Bread served with a luscious, homemade Caramel Pear Butter. This isn’t just a recipe; it’s an invitation to savor the simple pleasures of home baking.

Life, as we know, often comes with its own rich tapestry of experiences, some exhilarating, some demanding. Recently, our household has been a flurry of activity, from the joyous exhaustion of a Hawaiian getaway – a stunning escape that still lingers in my dreams – to the quiet, determined work of a complete blog transformation. As a self-proclaimed perfectionist, navigating this creative overhaul has been a journey in itself, but I’m thrilled to be nearing the finish line, eager to unveil a refreshed space very soon.

Amidst these busy transitions, a profound new chapter is unfolding. My husband and I are overjoyed to announce that we are expecting our first child this spring! This exciting news has filled our hearts with immense anticipation, though it has, admittedly, brought with it a newfound appreciation for sweatpants and the art of relaxation. My usual boundless energy for baking has taken a temporary backseat, replaced by a delightful, albeit sometimes challenging, period of quiet anticipation. I extend my sincere gratitude for your patience during these changes, and I promise to return with even more culinary inspiration as my energy levels bounce back. There’s a long list of fall and holiday recipes I’m absolutely buzzing to share!

These significant life shifts, though wonderful, have necessitated a slight pause in my usual content flow. Yet, even in moments of rest, inspiration can strike. Just before our Hawaiian adventure, I found myself with an abundance of ripe pears – beautifully fragrant, but a little past their prime for a crisp snack or an elegant dessert display. Their soft, yielding texture, however, hinted at a different destiny. A quick call for suggestions on social media yielded an overwhelming chorus: make pear butter.

The Art of Pear Butter: A Culinary Revelation

I must confess, the concept of “fruit butter” was somewhat new to me. I had certainly enjoyed apple butter, but the idea of pear butter was intriguing. My initial research revealed that fruit butter occupies a delightful space somewhere between a chunky jam and a smooth sauce. It’s a concentrated fruit paste, gently sweetened and cooked down until it achieves a silky, spreadable consistency akin to dairy butter, but bursting with pure fruit flavor. This discovery ignited my culinary curiosity, transforming those overripe pears from a potential waste into an exciting project.

To elevate this simple fruit butter into something truly special, I decided to infuse it with the rich, nuanced flavors of caramel. Adding brown sugar not only provides a beautiful depth of color as the pears simmer, but it also imparts a warm, molasses-like sweetness that complements the natural fruitiness of the pears perfectly. For an extra touch of sophistication and aromatic bliss, I split and scraped a vanilla bean directly into the simmering mixture. The result was nothing short of incredible. Even while lounging on a sun-drenched Hawaiian beach, my thoughts drifted back to the fragrant, golden pear butter cooling in my fridge. Upon returning home, my first mission was clear: find the perfect accompaniment for this exquisite spread.

Servings: 10 servings

Prep Time: 15 minutes

Cook Time: 40 minutes

Total Time: 55 minutes

Ingredients

For the Almond Quick Bread:

  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • ⅓ cup granulated sugar
  • 3 teaspoons baking powder
  • 1 large egg
  • 3 tablespoons unsalted butter, melted
  • 1 ½ cup milk
  • 2 teaspoons almond extract
  • ½ cup plus 2 tablespoons sliced almonds

For the Caramel Pear Butter:

  • 7 pounds pears, cored and sliced (ripe or slightly overripe are best)
  • ¼ cup lemon juice
  • 1 ½ cup packed light or dark brown sugar
  • 1 vanilla bean
  • ½ teaspoon salt

Instructions

To make the Almond Quick Bread:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9 x 5 inch loaf pan.
  2. Spread ½ cup of the sliced almonds on a sheet pan and toast in the preheated oven until just starting to turn golden brown, about 2 minutes. Keep a close eye on them to prevent burning. Set aside to cool completely.
  3. In a large mixing bowl, combine the all-purpose flour, whole wheat flour, granulated sugar, and baking powder. Whisk well to ensure all dry ingredients are evenly distributed.
  4. In a separate medium bowl, whisk together the milk, melted butter, egg, and almond extract until thoroughly combined.
  5. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Be careful not to overmix; a few lumps are perfectly fine. The batter will be thick.
  6. Gently fold in the cooled toasted almonds.
  7. Spread the batter evenly into the prepared loaf pan. Sprinkle the remaining 2 tablespoons of sliced almonds over the top of the batter.
  8. Bake for 35-40 minutes, or until a wooden toothpick inserted into the center of the bread comes out clean.
  9. Allow the bread to cool in the pan on a wire rack for about 10-15 minutes before carefully removing it and transferring it directly to the wire rack to cool completely.

To make the Caramel Pear Butter:

  1. Place the sliced pears and lemon juice in a large, heavy-bottomed saucepan or stockpot over medium-high heat.
  2. Allow the pears to release their juices and come to a gentle boil. Reduce the heat to low, cover, and simmer until the pears are very soft and tender, about 20 minutes, stirring occasionally.
  3. Once soft, carefully pass the cooked pears through a food mill to remove skins and cores, or blend them in a food processor until smooth. If using a food processor, for an extra smooth butter, you can then pass the puree through a fine-mesh strainer.
  4. Return the pear puree to the pot. Add the brown sugar, vanilla bean (split lengthwise and scraped for seeds, adding both pod and seeds), and salt.
  5. Return the mixture to a boil over medium heat, stirring constantly to dissolve the sugar. Once boiling, reduce the heat to low and let it simmer.
  6. Continue to simmer, stirring every few minutes to prevent sticking and burning on the bottom of the pot, until the pear butter is significantly thickened and reduced, and has developed a beautiful golden-brown, caramel-like color. This process can take anywhere from 45 minutes to 1.5 hours, depending on the moisture content of your pears and the heat setting.
  7. Once thickened to your desired consistency, remove the vanilla bean pod from the pear butter.
  8. Pour the hot pear butter into prepared sterilized jars for canning (follow proper canning procedures for long-term storage), or into an airtight plastic container for refrigeration.
  9. Caramel pear butter will keep fresh in the fridge for a few weeks, or in the freezer for several months. Properly canned jars can be stored for up to a year.

  • This quick bread is incredibly versatile. Feel free to add a sprinkle of cinnamon or nutmeg to the batter for a warmer spice profile, especially during the fall season.
