  • 1 ¼ cup unsalted butter , at room temperature (283 grams)
  • 1 ½ cup packed light or dark brown sugar (266 grams)
  • 1 teaspoon vanilla extract
  • 1 large egg
  • ¾ cup semi-sweet or bittersweet chocolate , chopped (135 grams)
  • 1 cup pistachios , chopped (120 grams)
  • Flaky or coarse salt , for sprinkling

  • In a medium bowl, whisk together the all-purpose flour, unsweetened cocoa powder, salt, and baking soda. Set aside. In the bowl of a stand mixer fitted with a paddle attachment, or in a large bowl using a handheld mixer, cream the room-temperature unsalted butter and packed light or dark brown sugar on high speed until the mixture is light, fluffy, and creamy, typically taking about 3-4 minutes. Stop the mixer, scrape down the sides of the bowl, then add the vanilla extract and beat until combined. Crack in the large egg and continue beating until fully incorporated. Gradually add the prepared dry flour mixture to the wet ingredients, mixing on low speed until just combined and no streaks of flour remain. Finally, gently fold in the chopped semi-sweet or bittersweet chocolate chunks and the chopped pistachios until evenly distributed throughout the dough.
