  • ¾ teaspoon coarse salt

  • ½ cup unsalted butter, at room temperature (113 grams)
  • ⅓ cup packed light or dark brown sugar (70 grams)
  • ⅓ cup honey (112 grams)
  • 1 teaspoon vanilla extract
  • ½ cup heavy cream (125 ml)
  • Coarse sugar, for sprinkling (optional)

Instructions

  1. In a bowl, combine the whole wheat flour, all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Whisk briefly to combine, then set aside.
  2. In the bowl of a stand mixer fitted with a paddle attachment (or a large bowl with a hand-held mixer), beat the butter, brown sugar, honey, and vanilla until the mixture is pale and creamy. Make sure to scrape down the sides of the bowl as needed to ensure everything is well incorporated.
