Mastering the Art of Shaping Breadsticks
The secret to perfect pull-apart breadsticks lies not just in the ingredients, but also in the shaping process. Don’t be intimidated; it’s simpler than you think! Follow these steps to create beautifully uniform and delicious breadsticks:
- Prepare the Dough: After your breadstick dough has completed its first rise and doubled in size, gently punch it down. This step is crucial as it releases the accumulated gases and helps create a finer, more even texture. Briefly knead the dough a few times by hand on a lightly floured surface to ensure it’s smooth and pliable.
- Divide Evenly: The key to uniformly sized breadsticks is accurate division. Divide the dough into 12 equal pieces. For best results, especially if you’re aiming for consistency, use a digital kitchen scale to measure each piece, ensuring they all weigh approximately the same. Once divided, gently shape each piece into a neat ball.
- Roll into Ropes: On a clean, lightly floured surface, take one dough ball at a time. Start with your hands together in the center of the ball and gently roll outward, applying even pressure. This technique helps to stretch the dough into a rope about 8 inches long. Maintain a consistent thickness throughout the rope for even baking. If the dough resists, let it rest for a minute or two before trying again.
- Arrange for Pull-Apart Perfection: Once shaped, place each rope of dough onto your prepared baking pan (greased or lined with parchment paper). Arrange the breadsticks close together, almost touching. This proximity is what encourages them to bake into a single, cohesive unit that can be easily pulled apart after baking, creating that wonderful communal eating experience.
Baker’s Tip: Yeast dough can dry out quickly when exposed to air. To prevent this, always keep any dough you’re not actively working with covered with plastic wrap or a clean kitchen towel. This ensures the dough remains soft and pliable, making it easier to shape and allowing for a better rise.

Ingredients
- 2 – 2 ½ cups all-purpose flour (240-300 grams)
- 1 packet Red Star Active Dry Yeast (2 ½ teaspoons, 7 grams)
- 1 teaspoon salt
- 2 tablespoons granulated sugar
- ⅔ cup water (155 ml)
- 3 tablespoons olive oil
- ¼ cup pesto , homemade or store-bought (60 grams)
- 3 tablespoons grated parmesan cheese
- Additional pesto , for serving (optional)
Instructions
-
In the bowl of a stand mixer fitted with a dough hook (or in a large bowl if mixing and kneading by hand), combine 1 ½ cups of the flour, yeast, salt, and sugar.
-
Heat the water and olive oil in a small saucepan until steaming. Remove from heat and let sit for 5 minutes, or until temperature is between 120-130°F. Slowly add the water and oil to the dry ingredients, while mixing on low speed. Use a spatula to scrape down the bowl as needed.
-
With the mixer on medium low, add the remaining flour a ¼ cup at a time, mixing until incorporated between each addition. Continue adding flour until the dough clears the bowl and is sticky to the touch without coming off in your hands.
-
Knead with a dough hook or by hand until smooth and elastic, about 5-8 minutes more.
-
Shape dough into a ball and place in a greased bowl and cover with plastic wrap. Put in a warm place and let rise until doubled, about 1 hour.
-
Gently push down on the center of the dough to release the gases and knead by hand on a clean surface a few times.
-
Divide dough into 12 pieces and roll each into a rope about 8 inches long. Place on a half sheet pan or inside a 9×13-inch pan that has been greased or lined with parchment paper. Cover with plastic wrap and let rise until doubled, about 30-45 minutes.
-
Preheat oven to 375°F. Brush breadsticks with pesto and sprinkle with parmesan cheese. Bake until golden, about 15 minutes. Let cool briefly before serving with additional pesto, if desired.

Ingredient Spotlight: The Power of Yeast
At the heart of these wonderfully soft breadsticks is **Red Star Active Dry Yeast**. Yeast is a living organism responsible for the rise, texture, and distinct flavor of baked bread. Active dry yeast needs to be activated, or “proofed,” in warm liquid before being combined with other ingredients. This ensures the yeast is alive and ready to work its magic. Using fresh, high-quality yeast is paramount for successful bread baking, giving your dough the lift it needs to achieve that light, airy interior. Red Star Yeast is a trusted brand among bakers for its consistent performance, making it an excellent choice for these pull-apart breadsticks.
The Art of Pesto and Parmesan
What truly elevates these breadsticks is the dynamic duo of pesto and Parmesan cheese. Pesto, with its vibrant blend of fresh basil, garlic, pine nuts, Parmesan, and olive oil, infuses the breadsticks with a Mediterranean flair. Whether you opt for a homemade pesto to control the freshness and flavor profile, or a quality store-bought version for convenience, the result is a burst of herbaceous goodness. When brushing the breadsticks with pesto before baking, you’re not just adding flavor; you’re also creating a moist, aromatic crust. The generous sprinkle of grated Parmesan cheese on top adds a salty, umami-rich crispiness that perfectly complements the soft bread and fragrant pesto. For the best flavor, choose freshly grated Parmesan over pre-shredded varieties, as it melts more smoothly and offers a more intense taste.
