They’re a fantastic addition to any cookie platter, a perfect homemade gift, or simply a luxurious indulgence for yourself and your loved ones. Their rich flavor profile and elegant presentation make them a truly special dessert.

Baking Tip: How to Use a Double Boiler to Melt Chocolate Perfectly
Melting chocolate can be a delicate process, but a double boiler makes it incredibly easy and helps prevent scorching or seizing. A double boiler consists of two pots: a larger one holding simmering water and a smaller, heat-proof pot or bowl nestled inside, using the gentle steam to heat the chocolate from below. While you can purchase a specific double boiler melting pot, any heat-proof bowl—such as glass, silicone, or metal—that fits snugly over a saucepan will work wonderfully.
- Fill the bottom pot with 1-2 inches of water, ensuring it does not touch the bottom of the upper bowl. Bring the water to a low simmer; it should not come to a rolling boil, as excessive heat can damage the chocolate.

- 1 cup chopped pecans (113 grams), divided
- 4 ounces cream cheese (113 grams), at room temperature
- ¼ cup caramel sauce or ice cream topping (85 grams)
- 8 ounces semi-sweet or bittersweet chocolate (225 grams), chopped
- Additional caramel sauce for drizzling (optional)

In a large bowl, either by hand with a sturdy spatula or using an electric mixer, combine the shortbread cookie crumbs, ¾ cup of the chopped pecans, softened cream cheese, and caramel sauce. Mix until all ingredients are well incorporated and form a cohesive, slightly sticky dough.

Using a #40 cookie scoop or your hands, form the mixture into approximately 1-inch balls. Aim for uniform size for even dipping. Place these truffle balls onto a baking pan lined with parchment paper or wax paper. Freeze them for 10-15 minutes to firm them up, which will make them easier to dip in chocolate.

While the truffles are chilling, prepare your chocolate for melting. - To create cookie crumbs, you can easily use a food processor to finely grind your shortbread cookies. If you don’t have a food processor, place the cookies in a large ziplock bag and crush them using a rolling pin or a heavy object. Don’t worry if the crumbs aren’t perfectly uniform in size; a few larger pieces can add nice texture.
- For an extra touch of indulgence, after the chocolate coating has completely set, drizzle the truffles with additional caramel sauce and then top with pecans. If you choose this option, it’s best to serve or chill the truffles immediately after drizzling, as the caramel can become quite sticky and runny over time.
