Ingredients

Brownie bites:

  • 1 cup unsalted butter, melted and cooled (226 grams)
  • 1 ½ cup granulated sugar (300 grams)
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup unsweetened cocoa powder (65 grams)
  • 1 cup all-purpose flour (120 grams)
  • Pinch of salt
  • ½ cup sweetened shredded coconut (42 grams)

For nest assembly:

  • 1 cup sweetened shredded coconut (85 grams)
  • 2 tablespoons butter
  • ½ cup semi-sweet chocolate chips (85 grams)
  • Milk chocolate candy eggs, for decoration

Instructions

To make the brownie bites:

  1. Preheat oven to 350°F (175°C). Grease a mini muffin pan generously with butter or a nonstick cooking spray, ensuring each cup is well-coated to prevent sticking.
  2. In a large mixing bowl, combine the melted and cooled unsalted butter with the granulated sugar. Whisk them together until well-combined and slightly creamy. Add the large eggs one at a time, incorporating each egg fully before adding the next. This helps create a smooth, emulsified batter. Stir in the vanilla extract until fragrant.
  3. In a separate medium bowl, whisk together the unsweetened cocoa powder, all-purpose flour, and a pinch of salt until thoroughly combined. Gradually add this dry ingredient mixture to the wet egg mixture, mixing gently until no streaks of dry ingredients remain. Be careful not to overmix, as this can lead to tough brownies. Avoid overbaking to maintain their fudgy texture. Let them cool in the pan for about 5 minutes before carefully transferring them to a wire rack to cool completely.

To assemble the nests:

  1. While the brownie bites cool, prepare the toasted coconut for the nests. Spread the remaining 1 cup of sweetened shredded coconut evenly onto a large baking sheet. Bake in the same 350°F (175°C) oven for about 5-6 minutes, checking and stirring the coconut every 2 minutes. Watch it very carefully, as coconut can go from perfectly golden to burnt in a matter of seconds. Once it’s a beautiful golden brown and fragrant, remove it from the oven and let it cool completely on the baking sheet.
  2. Create the chocolate topping. In a heat-proof bowl placed over a pot of simmering water (creating a double boiler), melt the 2 tablespoons of butter and ½ cup of semi-sweet chocolate chips. Stir continuously until the mixture is smooth, glossy, and fully combined. Be sure the bottom of the bowl does not touch the simmering water to prevent scorching. Remove the bowl from the heat once melted.
  3. Dip the tops of the cooled brownie bites into the melted chocolate mixture, allowing any excess to drip off. Immediately after dipping, place the chocolate-covered brownie bites back onto the wire rack. While the chocolate is still wet, generously sprinkle the toasted coconut over the tops, pressing gently to adhere. Finally, carefully place 2-3 milk chocolate candy eggs into the center of each brownie bite, creating the delightful “nest” effect. Allow the chocolate to set completely before serving.
