Artisan Multigrain Garlic Knots

Welcome to the ultimate guide for crafting Multigrain Garlic Knots that promise to be a showstopper at any meal. These delectable, savory knots are a harmonious blend of wholesome grains and irresistible garlic-infused butter, making them a true double threat in the culinary world. They’re not just scrumptious; they’re also wonderfully hearty and satisfying, offering a comforting bite that’s both familiar and uniquely enhanced by the rich texture and nutty flavor of multiple grains. Prepare to elevate your dinner table with these golden-brown, aromatic rolls that beckon with their enticing scent and perfect chew.

Embarking on a journey to “multigrain-ify” beloved yeast recipes has been a recent passion, and these garlic knots stand out as a prime example of its success. This endeavor stems from a desire to enjoy indulgent treats with a touch more goodness, allowing for guilt-free enjoyment. Beyond the nutritional boost, the true revelation has been the depth of flavor that whole grains impart. Multigrain breads boast a distinct nutty character and a complex taste profile that adds an extra dimension to classic baked goods. They transform simple carbs into an exciting culinary experience, providing everything you crave in a yeast roll and then some.

The journey to perfecting these Multigrain Garlic Knots involved careful consideration of texture. We understand the concern that adding whole grains might compromise the light and soft interior that traditional garlic knots are known for. Rest assured, these rolls are not 100% whole grain, and that’s precisely by design. Our goal was to create rolls that are undeniably heartier, yet still retain a wonderfully tender crumb. This is achieved through a thoughtful blend of all-purpose flour, alongside nutritious whole wheat flour, robust rye flour, protein-rich flax seeds, and wholesome oats. This careful combination ensures a delightful balance, delivering the best of both worlds: a satisfying chew and a soft, airy texture.

Should your preference lean towards a completely whole grain option, you can certainly make that adjustment. While it may alter the final texture slightly, substituting the all-purpose flour with additional whole wheat flour will yield an even more nutrient-dense knot. This flexibility allows you to customize the recipe to your dietary preferences without compromising on flavor or the joy of homemade bread. No matter your choice, the intoxicating aroma of freshly baked bread combined with savory garlic butter will fill your kitchen, promising a treat that’s hard to resist.

One might wonder if these rolls can truly be called “healthier” when generously bathed in melted butter and minced garlic. And to that, we confidently say, “Maybe not entirely in the strictest sense, but absolutely in the sense of balanced indulgence and added nutritional value!” The inclusion of wholesome grains like whole wheat, rye, oats, and flax seeds significantly boosts the fiber content, essential vitamins, and minerals. This makes them a more nutritionally robust choice compared to their all-white flour counterparts, allowing you to enjoy these flavorful knots without a hint of guilt. In fact, you might find yourself reaching for a third, completely justified by the wholesome goodness within.

These Multigrain Garlic Knots aren’t just a recipe; they’re an experience designed to bring warmth and joy to your home. They represent the perfect marriage of rustic charm and refined flavor, marrying the comforting familiarity of classic garlic knots with the nutritional benefits and earthy notes of diverse grains. The anticipation built during the kneading and rising stages, followed by the irresistible aroma that fills your kitchen as they bake, culminates in a truly rewarding culinary achievement. Whether served as an appetizer, a side with your favorite Italian dish, or simply enjoyed on their own, these knots are bound to become a staple in your recipe repertoire.

Ingredients

For the knots:

  • 1 cup water (250 ml)
  • cup unsalted butter (72 grams)
  • ¼ cup honey (85 grams)
  • 1 ½ cups whole wheat flour (170 grams)
  • ¼ cup rye flour (26 grams)
  • cup old fashioned rolled oats (28 grams)
  • ¼ cup flax seeds (35 grams)
  • 2 ¼ teaspoons Red Star Active Dry Yeast (1 package, 7 grams)
  • 2 teaspoons salt
  • 1 large egg
  • 1 ½ cups all-purpose flour (180 grams)
  • 1 large egg + 1 teaspoon water , for egg wash

For the garlic butter:

  • cup unsalted butter (72 grams)
  • 4 cloves garlic , minced
  • 1 teaspoon salt
  • ¼ cup parsley , chopped (15 grams)

Instructions

  • Warm the water, butter, and honey in a small saucepan over medium-low heat until the butter is completely melted. Stir gently until the mixture is smooth and well combined. Remove the saucepan from the heat and allow it to cool for approximately 5 minutes, or until its temperature reaches between 120-130°F (49-54°C). This temperature is crucial for activating the yeast.
  • In the bowl of a stand mixer equipped with a dough hook, combine the dry ingredients: whole wheat flour, rye flour, rolled oats, flax seeds, active dry yeast, and salt. Pour in the warm butter mixture along with the beaten egg. Mix on low speed until all ingredients are just combined. Gradually add the all-purpose flour, a quarter cup at a time, continuing to mix on low speed until the dough begins to pull away from the sides of the bowl. The dough should still feel slightly sticky to the touch; you may not need all of the designated all-purpose flour.
  • Increase the mixer speed to medium and knead the dough for about 5-7 minutes. During this time, the dough will transform, becoming smooth, elastic, and supple. Once kneaded, transfer the dough to a lightly greased bowl, ensuring all sides are coated. Cover the bowl tightly with plastic wrap or a clean kitchen towel and place it in a warm, draft-free spot. Let the dough rise until it has visibly doubled in size, which typically takes about 1 hour. This first rise is vital for developing flavor and texture.
  • Once the dough has doubled, gently punch it down to release the accumulated gases. This process, known as degassing, helps to create a finer crumb structure. Briefly knead the dough a few times on a lightly floured surface, just enough to reshape it. Cover the dough again and let it rest for about 5 minutes. This short resting period allows the gluten to relax, making the dough easier to handle and shape.
  • Divide the rested dough into 12 equal pieces. For best results in consistency, you can weigh each piece. Take one piece of dough and roll it between your hands or on a clean surface into a rope approximately 10 inches (25 cm) long. Using your fingers, carefully tie the dough rope into a simple knot. Place the formed knots onto a baking sheet lined with parchment paper, ensuring enough space between each knot for expansion. Cover the sheet pan with plastic wrap and let the knots rise for a second time, for 30-60 minutes, or until they have nearly doubled in size.
  • While the knots are undergoing their second rise, preheat your oven to 375°F (190°C). Once risen, prepare the egg wash by lightly beating the large egg with 1 teaspoon of water. Gently brush the tops of each multigrain garlic knot with this egg wash. This will give them a beautiful golden-brown crust and a slight sheen. Bake the knots in the preheated oven for approximately 20 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
  • While the knots are baking, prepare the aromatic garlic butter. In a small saucepan, melt the remaining ⅓ cup of unsalted butter over medium-low heat. Add the minced garlic and let it gently cook for 1-2 minutes, stirring occasionally, until it becomes fragrant but not browned. Remove from heat and stir in the salt and fresh chopped parsley. As soon as the freshly baked knots emerge from the oven, immediately brush the warm rolls generously with the fragrant garlic butter. Serve them without delay to enjoy their peak flavor and warmth.
  • These Multigrain Garlic Knots are undoubtedly at their absolute best when enjoyed on the day they are made, while still warm and fresh. However, if you have any leftovers, they can be stored in an airtight container at room temperature for up to 3 days. To refresh them, a quick warm-up in a toaster oven or microwave can bring back some of their original softness and aroma.
