- 750 ml bottle dry Riesling
- ½ cup + 2 tablespoons granulated sugar (200 grams)
- 1 tablespoon amaretto liqueur
- 4 white peaches
- 1 cup creme fraiche (226 grams)
Instructions
- Bring a large pot of water to a boil. Meanwhile, use a paring knife to score a small “x” into the bottom of each peach. Carefully place the peaches in the boiling water for 20 seconds, then remove them immediately. Starting at the “x” mark, gently use your fingers or a small knife to remove the skin of each peach. Once peeled, cut the peaches in half and carefully remove the pit.
- In a medium saucepan, combine the dry Riesling wine, the amaretto liqueur, and ½ cup of granulated sugar. Place the saucepan over medium-high heat and bring the mixture to a boil, stirring continuously until all the sugar has completely dissolved, creating a fragrant syrup. Once boiling, gently add the prepared peach halves to the syrup and bring it back to a boil briefly. Remove the saucepan from the heat, cover it tightly with a lid, and allow the peaches to cool to room temperature within the poaching liquid.
- Once the peaches have reached room temperature, carefully remove them from the saucepan and set them aside. Return the poaching liquid alone to medium-high heat.
