Ingredients for Magic: What You’ll Need

Ready to bring these delightful rolls to life? Gather these essential ingredients, and let the baking adventure begin! You’ll find the full, detailed recipe with exact measurements in the recipe card at the bottom of this article.

  • All-Purpose Flour: The foundation of our rolls, providing structure and a tender crumb.
  • Unsalted Butter: The key to their rich, luxurious flavor and incredibly soft texture. Melted and cooled, it perfectly incorporates into the dough.
  • Active-Dry Yeast: Our primary leavening agent, responsible for the wonderful rise and airy texture. Ensure it’s active for best results!
  • Egg: Adds richness, helps with structure, and contributes to the golden crust.
  • Granulated Sugar: Not just for sweetness, it also feeds the yeast, helping it activate and produce carbon dioxide for a superior rise.
  • Salt: Essential for balancing the flavors and enhancing the overall taste of the rolls. Don’t skip it!
  • Baking Powder: The secret ingredient that works in tandem with yeast, providing an extra boost for a quicker, higher rise and an even lighter, more delicate crumb.
  • Warm Water: Crucial for activating the yeast. Ensure it’s between 105-115°F (40-46°C) – warm to the touch, but not hot.

Why Use Both Yeast and Baking Powder? This is the unique element that makes these “fairy” rolls so exceptionally light and fluffy! While yeast alone provides a beautiful rise, the addition of baking powder offers a synergistic effect. It acts as a secondary leavening agent, giving the dough a quicker and more significant lift, especially during the second rise. This combination also contributes to an incredibly tender, delicate crumb that sets these rolls apart.

Effortless Baking: How to Make Easy No-Knead Crescent Rolls

Making these rolls is a straightforward and enjoyable process. Just follow these simple steps for perfectly light and fluffy results:

  1. Activate Yeast & Mix Dough: Begin by combining the warm water (ensure it’s not too hot, around 105-115°F or 40-46°C, to activate but not kill the yeast) and active dry yeast in a large bowl. Let this mixture sit for about 5 minutes until it becomes foamy, indicating the yeast is active and ready to work its magic. Then, add the cooled melted butter, granulated sugar, and the large egg to the yeast mixture. Stir well to combine these wet ingredients. Next, gradually incorporate the all-purpose flour, baking powder, and salt. Stir everything with a sturdy wooden spoon or a dough whisk until the ingredients are just combined and the dough comes together in a shaggy, somewhat sticky ball. Avoid overmixing; a shaggy texture is perfectly normal for a no-knead dough. mixing fairy roll dough
  2. First Rise: Once your dough is mixed, cover the bowl loosely with plastic wrap or a clean kitchen towel. Place it in a warm, draft-free spot to rise. A warm oven (heated to its lowest setting for a few minutes, then turned off) or simply a warm spot on your counter works perfectly. Allow the dough to rise for approximately 1 hour, or until it has visibly doubled in size. This first rise develops flavor and creates that airy texture. After rising, gently punch down the dough to release the air, then briefly work it with your hands on a lightly floured surface to form a cohesive ball. risen fairy roll dough, in a ball on floured counter
  3. Roll, Cut, and Shape: Lightly flour your work surface. Divide the dough ball in half. Take one portion and roll it out with a rolling pin into a large circle, roughly 12 inches in diameter. Using a pizza cutter or a sharp knife, cut this circle into 12 equal pizza-shaped wedges or triangles. Starting from the wider end of each triangle, gently roll the dough upwards towards the pointy tip, creating the classic crescent shape. Place the shaped rolls onto a baking sheet lined with parchment paper, ensuring the pointy end is tucked underneath to prevent them from unraveling during baking. Repeat this process with the second half of the dough, yielding a total of 24 beautiful crescent rolls. cutting, rolling and putting crescent rolls on a sheet pan
  4. Second Rise & Preheat Oven: Once all your rolls are shaped, cover them loosely with greased plastic wrap or a clean kitchen towel to prevent drying. Let them rise again in a warm place for about 30 minutes. During this second, shorter rise, preheat your oven to 375°F (190°C). This ensures the oven is at the perfect temperature when the rolls are ready, promoting an optimal final rise and golden crust.
  5. Bake to Golden Perfection: Transfer the baking sheets with the risen rolls to the preheated oven. Bake for approximately 20 minutes, or until the rolls are beautifully golden brown on top and puffed up, indicating they are cooked through and wonderfully light. Keep an eye on them towards the end of the baking time, as oven temperatures can vary.
  6. Buttery Finish: The moment the rolls emerge from the oven, while they are still piping hot, immediately brush them generously with melted butter. This not only adds an extra layer of rich flavor and a beautiful sheen but also contributes to their irresistible softness. These “fairy” rolls are truly at their best when served warm, straight from the oven, offering a delightful experience that’s hard to resist! fairy crescent rolls baked on a pan

Pro Tips for Perfect Rolls

Achieving consistently perfect “fairy” crescent rolls is easier than you think, especially with a few expert tips. Here are some insights to help you bake like a pro and get the most out of this incredible recipe:

  • Consider the Yield: Don’t be intimidated by the recipe yielding 24 rolls. While it might seem like a lot, these rolls are delicately sized, and their irresistible nature means guests often reach for more than one. They’re a staple for any gathering, and leftovers (if there are any!) are easily stored.
  • Halving the Recipe: If you’re baking for a smaller crowd or just want a modest batch, you can certainly halve the recipe. For best results when halving, use 1 egg yolk instead of a whole egg (or a small egg if available) and precisely 2 tablespoons of granulated sugar to maintain the perfect balance of moisture and sweetness.
  • Choosing Your Yeast: For bread baking, I wholeheartedly recommend Red Star Platinum Yeast for its reliability and excellent performance. You can use either active-dry or quick-rise (also known as rapid-rise or instant) yeast for this recipe. If you opt for instant yeast, be aware that your rising times will be approximately cut in half, so keep a close eye on your dough.
  • Mixing Tools Matter: While a large spoon or spatula will work just fine, a dough whisk is my absolute favorite tool for mixing this no-knead dough in a large bowl. Its unique design efficiently combines ingredients without overworking the gluten, making for a beautifully shaggy yet cohesive dough. A wire whisk can be useful for initially combining the wet ingredients to ensure they are well emulsified before adding the dry components.
  • Creating the Ideal Rising Environment: A warm, draft-free environment is crucial for proper yeast activation and dough rise. My go-to method is to use my oven: heat it to its lowest setting for just a few minutes, then turn it off. Place your covered dough bowl on the center rack and close the door. The residual warmth creates a perfect proofing box. For more detailed tips on rising and proofing yeast breads, you can explore additional resources online.
  • Mom’s Butter Rub Technique: While a pastry brush works for applying melted butter, my mom always used a simpler, more efficient method that I’ve adopted: take a stick of butter, unwrap it partially, and rub it directly all over the hot rolls immediately after they come out of the oven. This ensures an even, generous coating that sinks into the warm rolls, contributing to their incredible flavor and softness.
  • Troubleshooting Common Issues:
    • Dough Not Rising? Ensure your water temperature was correct (not too hot, not too cold) and your yeast isn’t expired. A warm rising environment is also key.
    • Rolls Too Dense? This can happen from overmixing the dough or not allowing enough rise time. Gentle handling and patience during rising are crucial for an airy texture.
    • Over-Browning? If the tops are browning too quickly, loosely tent the rolls with aluminum foil for the remaining baking time.
  • Flavor Variations: These rolls are fantastic as is, but feel free to experiment!
    • Savory: Add a tablespoon of dried herbs like rosemary or thyme to the dough. You could also sprinkle grated Parmesan cheese on top before baking.
    • Sweet: Brush with a honey-butter glaze instead of plain butter, or sprinkle with cinnamon sugar for a morning treat.

baking tip:4 Ways to Prepare Rolls in Advance for Stress-Free Entertaining

  • Rise the Bulk Dough in the Fridge Overnight: This method is fantastic for developing deeper flavors. After mixing the dough, place it in a generously greased bowl, cover it tightly with plastic wrap, and refrigerate overnight (8-12 hours). The slow, cold fermentation enhances the taste. The next morning, simply proceed with shaping the rolls, allowing them to rise at room temperature until puffy, and then bake as directed.
  • Rise the Shaped Rolls in the Fridge Overnight: For ultimate morning convenience, shape your rolls and arrange them in a greased baking dish or pan lined with parchment paper. Cover them meticulously with plastic wrap (ensure it’s airtight to prevent drying) and refrigerate overnight. The following morning, take the pan out and let the rolls come to room temperature for 1 to 1.5 hours, or until they have visibly puffed up, before baking them as usual.
  • Freeze Unbaked Shaped Rolls for Up to 2 Months: This is a superb option for long-term make-ahead. After shaping the rolls, place them on a parchment-lined pan, ensuring they aren’t touching each other. Cover with plastic wrap and freeze for about 1 hour until firm. Once frozen, transfer the rolls to a heavy-duty freezer-safe ziplock bag and store for up to 2 months. When you’re ready to bake, arrange the frozen rolls in a greased baking dish, thaw at room temperature for several hours (they will also rise during this time), until they are puffy, then bake as per the recipe.
  • Freeze Baked Rolls for Up to 1 Month: If you prefer to have fully baked rolls ready to go, bake them as normal and allow them to cool completely. Wrap them tightly in aluminum foil, then place the foil-wrapped rolls into a ziplock bag. Store in the freezer for up to 1 month. To reheat, remove them from the bag, loosen the foil slightly, and warm them in a 300°F (150°C) oven for 20-25 minutes, or until heated through and soft.
