Reese’s Chocolate Peanut Butter Icebox Cake: Your Ultimate No-Bake Dream Dessert
Indulge in layers of rich chocolate wafers, a velvety peanut butter-cream cheese filling, and generous chunks of iconic Reese’s Peanut Butter Cups. This simply stunning no-bake icebox cake promises an effortless path to pure dessert bliss, making it the perfect treat for any occasion, especially when you crave something decadent without turning on the oven.
Why Icebox Cakes Are Your New Favorite No-Bake Indulgence
Icebox cakes have become my absolute favorite dessert revelation. They embody everything a home baker could wish for: they’re incredibly fun to assemble, remarkably easy to prepare, and best of all, they require absolutely no baking! The only real ingredient needed is a dash of patience. For these magical desserts to truly transform, a good 24 hours, or even a bit longer, in the refrigerator is essential. If you can master the art of waiting, you will be rewarded with a dessert experience that is far greater than the sum of its parts.
What I adore most about icebox cakes is their unparalleled versatility. The possibilities are truly endless, allowing for any flavor and ingredient combination you can envision. Are you a devoted fan of Reese’s Peanut Butter Cups, just like me? Then prepare to fall head over heels for this extraordinary Reese’s chocolate peanut butter icebox cake. I’ve been dreaming of bringing this specific flavor combination to life for months, and last week, that delicious dream finally became a reality. The result is a symphony of textures and tastes that perfectly captures the beloved chocolate and peanut butter duo in an elegant, easy-to-make cake.
Crafting the Perfect Chocolate Peanut Butter Dream
This particular Reese’s Chocolate Peanut Butter Icebox Cake truly shines even brighter on the second and third day after assembly. While it’s hard to imagine it lasting that long in most households, the extended chill time allows all the components to meld together beautifully. The chocolate wafer cookies, initially crisp, slowly absorb moisture from the creamy filling, transforming into a luxuriously soft, cake-like texture. Meanwhile, the rich peanut butter filling firms up, settling into every crack and crevice, ensuring a dense, satisfying consistency with every forkful. The flavors themselves deepen and intensify, creating a harmonious blend that’s nothing short of addictive. Each bite of this chilled delicacy had me uttering sounds of pure delight, a testament to its irresistible charm.
For anyone who cherishes the classic pairing of chocolate and peanut butter, this icebox cake is nothing less than a dream come true. It’s a sophisticated yet incredibly approachable dessert that promises maximum flavor with minimal effort. The interplay of the smooth, sweet peanut butter cream, the softened chocolate wafers, and the unmistakable taste of Reese’s Peanut Butter Cups creates a multifaceted experience that will satisfy even the most discerning sweet tooth. It’s the ideal centerpiece for a gathering or a perfect indulgence for a quiet evening at home.
Project Peanut Butter: Making a Difference, One Peanut at a Time
While I am incredibly fortunate to enjoy decadent desserts like this Reese’s Icebox Cake on a regular basis, it’s a stark reality that countless individuals, particularly children, struggle daily to obtain enough food to merely survive. Severe Acute Malnutrition (SAM) stands as the single largest killer of children under the age of five globally, claiming approximately 3 million young lives each year. This sobering statistic highlights a profound and urgent humanitarian crisis that demands our attention.
However, amidst this challenging reality, there is undeniable hope! Project Peanut Butter is a pioneering nonprofit organization dedicated to eradicating child malnutrition in impoverished African countries, including Malawi, Sierra Leone, and Ghana. Their innovative approach involves the development and distribution of a peanut-based Ready-to-Use Therapeutic Food (RUTF). These RUTFs are specially formulated, nutrient-dense pastes, fortified with essential vitamins and minerals, capable of curing up to 95% of severely malnourished children in just a few weeks. This simple yet revolutionary solution provides a lifeline to millions, transforming despair into a chance at a healthy life.
The Hershey Company proudly stands as a vital partner of Project Peanut Butter, playing a pivotal role in bringing the nonprofit’s life-saving mission to Ghana. For many years, The Hershey Company has been actively engaged in supporting education and community development programs within rural Ghana, a region renowned as a global leader in cocoa production. By establishing an RUTF factory in Ghana in collaboration with Project Peanut Butter, Hershey is taking another significant step towards empowering and uplifting the very communities that supply the cocoa bringing joy to so many in the form of chocolate. This commitment extends beyond business, demonstrating a deep dedication to social responsibility and sustainable development.
Learning about this incredible partnership and its profound impact makes enjoying a classic Hershey’s Milk Chocolate Bar, a beloved Reese’s Peanut Butter Cup, and especially this decadent Reese’s Peanut Butter Icebox Cake, even more meaningful. It’s a wonderful reminder that the treats we cherish can also be connected to a larger purpose of global good.

Ingredients
For the cake:
- 8 ounces cream cheese , at room temperature (1 package, 226 grams)
- ½ cup creamy peanut butter (135 grams)
- 1 cup powdered sugar , sifted (227 grams)
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream (250 ml)
- Approximately 40 chocolate wafer cookies
- 2 cups Reese’s Peanut Butter Cups , cut into fourths
For the whipped cream:
- 1 ½ cup heavy whipping cream (375 ml)
- ⅓ cup powdered sugar (40 grams)
- 1 teaspoon vanilla extract
For the chocolate glaze:
- ¾ cup bittersweet or semisweet chocolate , chopped (4 oz, 113 grams)
- 2 tablespoons milk or cream
- 2 tablespoons unsalted butter
Instructions
-
In the bowl of a stand mixer fitted with a paddle attachment, or in a large bowl with a hand-held mixer, beat the cream cheese, peanut butter, powdered sugar and vanilla on medium high speed until completely smooth and free of lumps. Continue beating on high for an additional 1-2 minutes until the mixture becomes wonderfully light and fluffy.
-
You have two options here: either carefully transfer the peanut butter mixture to a separate bowl and thoroughly clean your mixer bowl and paddle, or, if you have a second mixer bowl, use that one. In your clean or second mixer bowl, beat the heavy cream until soft peaks form. Using a spatula, gently fold the cream cheese mixture into the freshly whipped cream in two additions, mixing only until the mixture is fully incorporated and smooth. Avoid overmixing to keep the light, airy texture.
-
To meticulously assemble your icebox cake, line an 8-inch cake pan (refer to the Note below for alternative pan options) with plastic wrap, ensuring ample overhang to cover the top of the cake later. Begin by arranging a single layer of chocolate wafer cookies evenly on the bottom of the pan. Carefully spread one-third of the decadent peanut butter cream cheese mixture over the cookies. Evenly scatter 1 cup of the chopped Reese’s Peanut Butter Cups (this is roughly equivalent to 10 whole cups) over the filling. Top with another layer of chocolate wafer cookies. Continue this layering process until you have created three distinct layers of cookies, filling, and peanut butter cups. Once all layers are in place, cover the cake securely with the overhanging plastic wrap and place it into the refrigerator to chill overnight, allowing the flavors to meld and the cookies to soften.
-
The following day, when the cake has set beautifully, prepare your final whipped cream topping. In a clean mixer bowl, beat the heavy cream until soft peaks begin to form. Incorporate the powdered sugar and vanilla extract, then continue beating for just another minute until you achieve medium peaks – this will create a perfect consistency for spreading.
-
Carefully invert the icebox cake onto your chosen serving plate or a beautiful cake stand. Gently remove the cake pan and peel away the plastic wrap. Spread the freshly prepared whipped cream evenly over the entire cake, creating a smooth, inviting white canvas. Return the cake to the fridge to chill while you proceed to prepare the lustrous chocolate glaze.
-
In a large, heatproof bowl, combine the chopped bittersweet or semisweet chocolate, milk or cream, and unsalted butter. Set this bowl over a pot of gently simmering water (ensure the bottom of the bowl does not touch the water). Allow the ingredients to melt slowly, stirring frequently, until the mixture is just barely smooth and perfectly glossy. It’s crucial not to overcook or overheat the chocolate. Once melted, remove the bowl from the heat and let the glaze cool down to room temperature, ensuring it thickens slightly but remains pourable.
-
Retrieve the chilled cake from the refrigerator. Pour the cooled chocolate glaze generously over the top of the cake, allowing it to elegantly drip down the sides. For a final flourish and extra peanut butter goodness, top the cake with the remaining chopped Reese’s Peanut Butter Cups. Chill the cake once more until you are ready to serve. This magnificent icebox cake will remain fresh and delicious in the fridge for several days, improving with each passing hour.
