This innovative recipe was developed in partnership with Red Star Yeast, bringing you a guaranteed success in your baking journey.

The Evolution of Cornbread: From Quick Bread to Leavened Loaf

For many, cornbread holds a special place in their hearts – a warm, buttery, and utterly satisfying staple. Whether it’s from a cherished family recipe or a convenient box mix, the simple pleasure of fresh cornbread, generously slathered with butter, is undeniable. Yet, despite its deliciousness, traditional cornbread, a quick bread leavened with baking powder, can sometimes feel a bit predictable, even mundane. It offers a dense, crumbly texture that, while delightful, rarely sparks culinary excitement.

However, an inspired twist has transformed this humble staple into something truly extraordinary: the Yeasted Honey Cornbread Loaf. This recipe breathes new life into cornbread by embracing the time-honored art of yeast leavening. The result is a loaf that marries the characteristic sweetness and earthy flavor of cornmeal with the incredible lightness, chewiness, and complex aroma that only yeast can provide. No longer content to be a mere side dish, this bread proudly stands on its own, promising a delightful texture and a depth of flavor that will surprise and impress.

Unlike its quick-bread counterparts, this cornbread loaf is crafted with the same care and technique as any artisan yeast bread. It involves the methodical steps of mixing, kneading (either by hand or with the effortless help of a stand mixer), and patiently allowing the dough to rise and ferment. This process is crucial, as it develops the gluten structure, creates those desirable airy pockets, and enhances the overall flavor profile, transforming simple ingredients into a truly spectacular bread. The aroma alone as it bakes will fill your kitchen with an irresistible warmth and promise of something truly special.

Unleash the Versatility of Your Yeasted Cornbread Loaf

This yeasted cornbread is not just flavorful and fun to make; its versatility knows no bounds. It opens up a world of culinary possibilities, making it a star at any meal or occasion. Imagine starting your day with a slice of this magnificent loaf, lightly toasted and adorned with a touch more honey, fresh fruit, or even a savory avocado spread. The slightly sweet, tender crumb provides a perfect canvas for both sweet and savory toppings.

For lunch, elevate your sandwich game. This honey cornbread makes an exceptional foundation for classic deli meats, a hearty BLT, or even a gourmet grilled cheese. Its robust structure holds up beautifully to fillings, while its distinctive flavor adds an exciting dimension that plain white or wheat bread simply can’t match. Picture a pulled pork sandwich, nestled between two slices of this cornbread – a truly unforgettable experience.

And when it comes to dinner, particularly those beloved summer barbecues or comforting winter stews, this loaf truly shines. It’s the perfect accompaniment to chili, grilled chicken, or slow-cooked ribs, soaking up rich sauces and complementing bold flavors. It can even be cubed and toasted for a unique crouton in your favorite salad, or used as a base for a savory bread pudding. This is the kind of bread that invites creativity in the kitchen and delivers delightful results every time.

baking tip:How to shape a loaf of bread for perfect results

  • **Prepare Your Dough:** Once your dough has completed its first rise, gently punch it down to release the air. Turn it out onto a lightly floured surface, ready for shaping.
  • **Roll It Out:** Use a rolling pin to carefully roll the dough into a long, even rectangle. Aim for a width of approximately 8 inches. Consistency in thickness is key here for an even bake.
  • **Form the Log:** Starting from one of the shorter sides, begin tightly rolling the dough into a log shape. Ensure each turn is snug to prevent large air pockets from forming in the finished loaf.
  • **Seal the Ends:** Pinch the dough firmly together at each end of the log to seal it. Then, tuck these sealed ends underneath the loaf. This creates a smooth, professional-looking exterior for your bread.
  • **Final Rise:** Place the shaped dough, seam-side down, into a greased 9×5-inch loaf pan. Cover it loosely and allow it to rise in a warm spot until it has visibly doubled in size. This second rise is crucial for a light and fluffy texture.

Ingredients

  • 3 tablespoons unsalted butter (42 grams)
  • ¼ cup honey (85 grams)
  • 1 cup whole milk (237 ml)
  • 1 cup yellow cornmeal (140 grams)
  • 2 ½ – 3 cups all-purpose flour (300-360 grams)
  • 1 ½ teaspoon salt
  • 2 ¼ teaspoon Red Star Active-Dry Yeast (1 envelope, 7 grams)
  • Melted butter , for brushing

Instructions

  • In a small saucepan over low heat, combine the butter, honey, and milk. Gently warm the mixture until the butter is completely melted and the ingredients are smoothly incorporated. Remove from heat and allow it to cool for about 5 minutes, or until its temperature registers between 120-130°F. This temperature is crucial for activating the yeast without killing it.
  • In the bowl of a stand mixer equipped with a dough hook attachment, add the cornmeal, 1 ½ cups of the all-purpose flour, salt, and Red Star Active-Dry Yeast. Pour in the warm milk mixture and mix on low speed until all ingredients are just combined and a shaggy dough forms.
  • Increase the mixer speed to medium-low. Gradually add the remaining all-purpose flour, a quarter cup at a time, until the dough begins to clear the sides of the bowl and is only slightly sticky to the touch. You may not need to use the entire 3 cups of flour, so add it cautiously. Continue to knead the dough for approximately 5-7 minutes, until it becomes smooth, elastic, and supple.
  • Transfer the kneaded dough to a lightly greased bowl, ensuring the entire surface of the dough is coated. Cover the bowl tightly with plastic wrap to prevent a skin from forming. Place the bowl in a warm, draft-free spot and let the dough rise until it has clearly doubled in size, which typically takes about 1 hour.
  • Once doubled, gently punch down the dough to release the accumulated gases. Turn it out onto a clean, lightly floured work surface and knead it a few times to reshape. Allow the dough to rest for about 5 minutes; this helps relax the gluten and makes shaping easier. Following the instructions in our baking tip above, roll out the dough into an 8-inch wide rectangle. Starting from a short side, tightly roll the dough into a log and place it seam-side down into a greased 9×5-inch loaf pan.
  • Cover the loaf pan loosely with plastic wrap and let it rise again in a warm spot until it has doubled in size, usually about 30 minutes. While the dough is completing its second rise, preheat your oven to 375°F (190°C).
  • Bake the loaf in the preheated oven for approximately 40-45 minutes, or until the top is beautifully golden brown and sounds hollow when tapped. As soon as you remove the warm loaf from the oven, brush its top generously with melted butter. This adds shine, extra flavor, and keeps the crust tender. Serve your incredible Yeasted Honey Cornbread Loaf warm, or allow it to cool to room temperature – it’s delicious either way!
