Ingredients

For the cupcakes:

    all-purpose flour

For the frosting:

  • 1 ½
    cup
    unsalted butter
    (340 grams)
  • 4
    cups
    powdered sugar
    , sifted (455 grams)

    vanilla extract

  • 3-4
    tablespoons
    strawberry purée

Instructions

To make the cupcakes:

  1. Preheat oven to 350°F (175°C). Line a muffin pan with paper liners or generously grease with butter and flour to prevent sticking.
  2. Purée the fresh strawberries in a food processor or blender until smooth. Measure out ½ cup of the purée for the cupcake batter and set aside the remaining purée for the frosting.
  3. In a large bowl, whisk together the dry ingredients: all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  4. In the bowl of a stand mixer fitted with a paddle attachment, combine the eggs, sparkling wine, the reserved ½ cup of strawberry purée, and vegetable oil. Mix on medium-high speed for about 2 minutes, ensuring all wet ingredients are thoroughly combined. Gradually add the dry flour mixture in two additions, mixing gently after each until just combined. Be careful not to overmix.
  5. Pour the cupcake batter evenly into the prepared muffin pan, filling each cup about ¾ full. Bake for approximately 20-25 minutes, or until a wooden toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool completely on a wire rack before frosting.

To make the frosting:

  1. In the clean bowl of a stand mixer fitted with a paddle attachment, beat the softened unsalted butter on medium-high speed until it becomes light, fluffy, and smooth, which usually takes about 2-3 minutes. Gradually add the sifted powdered sugar, vanilla extract, a pinch of salt, and the remaining strawberry purée. Mix on medium speed until the frosting is smooth and creamy. If a thinner consistency is desired, add an extra tablespoon or two of strawberry purée, sparkling wine, or milk until the perfect texture is achieved.
  2. Once the cupcakes are completely cool, frost them generously with the luscious strawberry buttercream. Store the frosted cupcakes in an airtight container in the refrigerator to maintain their freshness and flavor. These delightful cupcakes will keep well for several days.

  • Sparkling Wine Substitution: If you prefer to omit the champagne or sparkling wine, a delicious alternative is to substitute it with an equal amount of water or milk for a non-alcoholic version.
